The Punk Rock Baker
We met German surrounded by the smell of freshly baked bread at Salvaje – his busy bakery in Palermo.
I re-discovered baking at the perfect point in my life (it was my grandma who taught me initially). I was a depressed copywriter, I enjoyed writing but advertising just wasn’t for me. I needed something manual, more hands on. At the same time, I remember being tired of eating processed bread. I decided to give baking a go - I’ve never looked back.
After working in restaurants all over the world, I returned to Buenos Aires and opened the ‘Salvaje Bakery’. Me and my team come in every day, knock out batches of incredibly delicious breads and pastries, and rock along to some awesome music. Music’s very important at Salvaje. I prefer hiring bakers who listen to good music, because music is essential for proper team work.
It’s different but that’s the Salvaje, there’s nowhere else like it in Argentina. We listen to the music we want. We serve the coffee we drink. Our bread recipes are like no one else’s. We don´t copy others, we built our own style, we do what our heart tells us, and try to be happy every day making others happy too.
Your heart is the only guide worth listening to.
No one’s got the key to happiness (I wish I did but I don’t). This is life, its’s happening now and it’s a privilege, so just enjoy it.
